Homemade Protein Bar recipe

Crunchy, high-protein bars made at home with simple ingredients. No oven needed.

Ingredients

  • Nuts
  • 1/2 small cup almonds
  • 1/2 small cup cashew nuts
  • 1/2 small cup walnuts
  • Seeds
  • 1/2 small cup pumpkin seeds
  • 1/2 small cup melon seeds
  • 1/2 small cup sesame seeds
  • 1 tbsp chia seeds
  • Other ingredients
  • 1/2 cup coconut powder (plus extra for topping)
  • 2 tbsp desi ghee (clarified butter)
  • 1 bowl jaggery (gurr)
  • 1/4 tsp baking powder

Method

Roast the nuts and seeds

  1. Heat 1 tbsp desi ghee in a pan. Add the almonds, cashew nuts and walnuts. Cook for 2 to 3 minutes until lightly roasted.
  2. Add the pumpkin seeds, melon seeds and sesame seeds. Cook for 1 more minute, stirring well.
  3. Mix in the coconut powder and cook for another 1 to 2 minutes.
  4. Add the chia seeds, mix well and set aside.

Prepare the jaggery syrup

  1. In the same pan, add 1 tbsp desi ghee and the jaggery. Cook on a low flame until it melts into a smooth paste.
  2. Add 1/4 tsp baking powder, mix well and let it cook briefly.

Combine and set the bars

  1. Add the roasted nuts and seeds to the jaggery syrup. Mix thoroughly to coat everything evenly.
  2. Transfer the mixture into a cake mold or a flat tray. Sprinkle coconut powder on top and press down firmly.
  3. Let it cool completely. Once set, cut into long bar shapes.
Good to know: Store in an airtight container for up to 2 weeks.
