Chicken Malai Kabab recipe
Moist, flavorful malai chicken kababs with a delicate balance of spices and a melt-in-the-mouth texture. A perfect starter or snack.

Ingredients
- For the chicken marination
- 1/2 kg boneless chicken, cut into small pieces
- 7 to 8 green chilies, chopped
- 1 tablespoon ginger-garlic paste
- 1 tablespoon coriander powder
- 1/2 cup yogurt
- 1/4 cup cooking oil
- 1/2 tablespoon salt
- For the kabab mixture
- 3 potatoes, boiled and mashed
- 1/2 tablespoon black pepper powder
- 1/2 tablespoon red chili flakes
- 1/2 tablespoon garam masala
- 1/2 cup cheese, grated
- 1/4 cup fresh cream
- 1/4 tablespoon salt
- Chopped coriander leaves
- For coating and frying
- 2 eggs, beaten
- Bread crumbs
- Cooking oil, for frying
Method
- In a mixing bowl, combine all the ingredients for the chicken marination. Mix well and marinate for 1 hour.
- Cook the marinated chicken until it is dry.
- Grind the cooked chicken in a grinder.
- In a large mixing bowl, add the ground chicken, mashed potatoes, black pepper powder, red chili flakes, garam masala, cheese, fresh cream, salt and chopped coriander. Mix well.
- Shape the mixture into rounded kababs.
- Dip each kabab into the beaten egg, then coat with bread crumbs.
- Heat cooking oil in a pan and fry the kababs until they are golden brown and crispy.
