Classic Cheese Omelette recipe
A classic cheese omelette is a folded egg dish filled with melted cheese, commonly eaten for breakfast with bread or paratha.

Ingredients
- 3 eggs
- 2 tbsp milk
- 1/4 tsp salt, or to taste
- 1/4 tsp black pepper
- 1 tsp butter or oil
- 40 g grated cheddar or mozzarella (about 1/3 cup)
- 1 green chilli, finely chopped (optional)
- 1 tbsp chopped coriander or spring onion
Method
- Crack the eggs into a bowl. Add the milk, salt and pepper and whisk for 30 seconds until fully mixed and slightly frothy.
- Heat the butter in a non-stick pan on medium-low heat until it melts and foams.
- Pour in the eggs and let them set for 20 seconds, then gently drag the edges to the centre, tilting the pan so raw egg runs underneath.
- When the top is just a little wet, scatter the cheese, chilli and coriander over one half.
- Cook for 30 seconds more until the cheese starts to melt and the egg is set through.
- Fold the empty half over the filling, slide onto a plate and serve hot.
Good to know: Keep the heat medium-low for a soft omelette. High heat makes it brown and rubbery.
