Egg Fried Rice recipe
A quick, flavorful egg fried rice, served alongside shashlik.

Ingredients
- 1/4 cup cooking oil
- 1/2 tablespoon ginger-garlic paste
- 1 carrot, finely chopped
- 2 eggs, mixed with yellow food color
- 1/2 tablespoon black pepper (adjust to taste)
- Green onion, chopped
- 1/2 kg boiled rice
- Salt and pepper, to taste
- Shashlik, for serving
Method
- Boil the rice in advance and set it aside. Chop the carrots and green onions finely.
- Heat a portion of the cooking oil in a pan. Add the eggs mixed with yellow food color and scramble until fully cooked. Remove from the pan and set aside.
- In the same pan, add the remaining oil and the ginger-garlic paste. Sauté until fragrant.
- Add the chopped carrots and stir-fry until slightly tender.
- Sprinkle in the black pepper and mix well. Adjust the amount to your spice preference.
- Add the boiled rice and mix well to combine it with the vegetables. Pour the scrambled eggs back into the pan and mix.
- Season with salt and pepper to taste. Toss in the chopped green onions and stir to distribute.
- Cover the pan and let the rice steam on low heat for 8 to 10 minutes so the flavors combine.
- Fluff the rice with a fork and serve alongside shashlik.
