Karak Chai recipe
Karak chai is a strong, milky tea simmered with cardamom and ginger, drunk in the morning or with evening snacks.

Ingredients
- 1 cup water (250 ml)
- 1 cup full-fat milk (250 ml)
- 2 tsp loose black tea leaves or 2 tea bags
- 2 to 3 tsp sugar, or to taste
- 2 green cardamom pods, lightly crushed
- 1/2 inch ginger, crushed
- Pinch of fennel seeds (optional)
Method
- Bring the water to a boil in a small pot with the cardamom and ginger.
- Add the tea leaves and boil for 2 minutes until the water turns dark.
- Add the sugar and stir until it dissolves.
- Pour in the milk and bring it to a boil. Let it rise to the top, then lower the heat.
- Simmer for 3 to 4 minutes, scooping and pouring a few times, until the tea is deep brown and thick.
- Strain into cups and serve very hot.
Good to know: Use full-fat milk for the richest taste. Boil the tea in water first, then add milk, so the colour develops properly.
