Ingredients

  • For the salad
  • 2 cucumbers, sliced into half moons
  • 2 tomatoes, deseeded and diced
  • 1 carrot, grated
  • 150 g cabbage, finely shredded
  • 1 small red onion, thinly sliced
  • A handful of fresh coriander, chopped
  • For the yogurt sauce
  • 150 g thick plain yogurt, about 3/4 cup
  • 1 garlic clove, grated
  • 1 tbsp lemon juice
  • 1 tbsp finely chopped mint
  • 1/2 tsp roasted cumin powder
  • 1/4 tsp black pepper
  • 1/2 tsp salt

Method

Make the sauce

  1. Whisk the yogurt until smooth. Mix in the garlic, lemon juice, mint, cumin, pepper and salt.
  2. Chill the sauce for 10 minutes so the flavours settle.

Assemble

  1. Combine the cucumber, tomato, carrot, cabbage, onion and coriander in a large bowl.
  2. Spoon the sauce over the vegetables just before serving and toss gently.
  3. Taste and add a little more salt or lemon if needed.
Good to know: Salt the sauce, not the vegetables, until the last minute so the salad stays crisp and does not turn watery.
