Ingredients
- 100 g fine vermicelli (seviyan), broken into small pieces
- 2 tbsp ghee
- 1 litre full-fat milk (4 cups)
- 1/2 cup sugar (100 g), or to taste
- 3 green cardamom pods, crushed
- 2 tbsp sliced almonds
- 2 tbsp chopped pistachios
- 2 tbsp raisins
- 2 tbsp desiccated coconut (optional)
Method
- Heat the ghee in a pot on medium heat. Add the vermicelli and fry for 2 to 3 minutes, stirring, until golden brown.
- Remove half the nuts for garnish. Add the rest of the nuts, raisins and the cardamom, and stir for 30 seconds.
- Pour in the milk and bring to a boil, stirring so the vermicelli does not stick.
- Lower the heat and simmer for 10 to 12 minutes until the vermicelli is soft and the milk has thickened slightly.
- Add the sugar and coconut and stir until dissolved. Cook for 2 more minutes.
- Garnish with the nuts and serve warm or chilled.
Good to know: The seviyan thicken as they cool, so stop cooking while the mixture is still a little loose. Add warm milk to loosen it if needed.
