Podina and Tomato Chutney recipe
A tangy green and red chutney served with samosas, pakoras, kababs and rice dishes.

Ingredients
- 2 medium tomatoes (about 200 g), chopped
- 1 cup fresh mint leaves (podina), packed
- 1/2 cup fresh coriander, chopped
- 2 to 3 green chillies
- 2 garlic cloves
- 1 tsp roasted cumin seeds (zeera)
- 1 tsp salt, or to taste
- 1 tbsp lemon juice
- 1 tsp sugar
- 1 tbsp oil
Method
- Heat the oil in a small pan on medium heat and add the tomatoes. Cook for 4 to 5 minutes until they soften and release their juice.
- Let the tomatoes cool completely.
- Add the cooled tomatoes, mint, coriander, chillies and garlic to a blender.
- Add the cumin, salt, sugar and lemon juice.
- Blend to a smooth, thick sauce, adding a spoon of water only if the blades stall.
- Taste and adjust salt, chilli and lemon juice, then chill before serving.
Good to know: Cool the tomatoes before blending. Hot tomatoes dull the colour of the mint.
