Ras Malai recipe
A popular, indulgent dessert of soft, spongy dumplings soaked in creamy sweetened milk flavored with cardamom.

Ingredients
- 1 litre doodh (milk)
- 1/2 cup cheeni (sugar)
- 5 to 6 hari elaichi (cardamom), crushed
- 1 cup dry milk powder
- All-purpose flour
- 1 tsp baking powder
- 3 to 4 tbsp ghee
- 1 anda (egg), beaten
- Badam (almonds)
- Pista (pistachios)
Method
- In a pot, add the milk, sugar and cardamom seeds. Mix well and cook until the sugar is dissolved (about 5 minutes). Set aside.
- In a bowl, add the dry milk powder, all-purpose flour, baking powder and cardamom seeds. Mix well.
- Gradually add the egg and knead until a dough is formed. Refrigerate for 5 to 8 minutes.
- Add the ghee and mix well.
- Take a portion of the mixture, make small balls of equal size and press them (makes 5 to 6).
- Heat the milk and add the balls one by one. Cover and cook on a low flame for 10 minutes. Do not stir or use any spoon.
- Garnish with almonds and pistachios and serve chilled.
