Aloo ki Kachori recipe
Quick, crispy potato kachoris, a Ramzan favourite.

Ramzan and Eid
Ingredients
- 3 medium boiled potatoes (mashed)
- 2 green chilies, chopped
- A handful of coriander leaves, chopped
- 1 large onion, finely chopped
- 1/2 cup flour
- 1 teaspoon cumin seeds
- 1/2 tablespoon chili flakes
- 1/2 tablespoon salt (or to taste)
- A pinch of carom seeds (ajwain)
- 1 teaspoon oil (for softness)
- Oil, for frying
Method
- In a mixing bowl, combine the mashed potatoes, green chilies, coriander leaves and chopped onion.
- Add the flour, cumin seeds, chili flakes, salt and carom seeds. Mix well.
- Add a little oil and knead the mixture into a soft dough.
- Make small balls from the dough and roll them into round shapes.
- Heat oil in a pan and fry the kachoris on a medium flame until golden brown and crispy.
- Remove from the oil and drain on paper towels.
- Serve hot with chutney or yogurt.
