Chocolate Pancakes recipe

Ingredients
- 2 eggs
- 6 tablespoons powdered sugar
- 400 ml milk
- 2 3/4 cups all-purpose flour (maida)
- 4 tablespoons cooking oil
- 2 teaspoons baking powder
- Chocolate syrup, for topping
Method
- In a mixing bowl, crack the eggs. Add the powdered sugar and the milk. Mix until well combined.
- Gradually add the flour to the wet mixture. Mix well to form a smooth batter with no lumps.
- Add the cooking oil and mix thoroughly. This makes the pancakes nice and moist.
- Add the baking powder and mix until evenly distributed. This helps the pancakes rise and become fluffy.
- Let the batter rest for about 5 minutes so the baking powder can activate.
- Heat a non-stick frying pan or griddle over medium-high heat. Lightly grease it with a little oil or butter if needed.
- Pour a ladleful of batter onto the center of the pan. Cook until bubbles start to form on the surface, about 2 to 3 minutes.
- Carefully flip the pancake and cook the other side until golden brown, another 2 to 3 minutes. Repeat with the remaining batter.
- Stack the pancakes on a plate, drizzle chocolate syrup on top and serve warm.
